This is wierd, Iam on HCG diet and needed a creamer desperatly. I just this week tried it in ( Coconut milk) my coffee w/stivia then added coco and wa-la.
Then I find your site tonight. THX
The trans fats I was consuming was gonna kill me.
P.S I use a stick blender and the coco w/coconut milk and truvia (my fave.) seems to keep it (milk) suspended and stay smooth to the last drop.

I am also on the HCG diet & have been told not to consume ANY fat or oil. Can not figure out how this has not adversely affected your weight loss.

I'm nearing the end of Phase 2 so will be trying the coffee recipe a.s.a.p. Sounds delicious & I have truly missed creamer & sweetener in my morning cup of joe. Stevia doesn't quite do it for me.

I think all this coconut is an acquired flavor...and I am trying to acquire it. :) tried this coffee but I couldn't drink it. my quest to hide coconut cream and oil in my food and drinks continues.

Debra - my favorite sugar substitute is Xylitol! You can order it on Amazon or at Whole Foods, Trader Joes, Natural Grocers.... many places - JUST MAKE SURE IT ISN'T MADE WITH CORN! Real Xylitol is made from Birch tree bark. I bought a 5 and 10 lb bag from the Xylitol manufacturer - less expensive. You can google the

Be careful of sugar substitutes - while they may claim to be "natural" most are very heavily processed and far removed from their natural form! If you don't want to use sugar (but whole cane sugar is not a bad product) I recommend raw honey or maple syrup.

I've gone paleo and have been searching for a milk substitute to enjoy with my coffee. I had coconut cream on hand and followed this recipe and added a twist. I place all ingredients in my Vitamix and blended on high for about 15 seconds. The result produced a lovely "creama" or "froth" atop my coffee. I used a glass mug so that I could enjoy the look as well as the taste. The only thing I love more than a good cup of coffee is a beautifully presented cup of good coffee!
