Chocolate Avocado Pudding

Mash the avocados and then puree in blender. Add remaining ingredients and blend until smooth and glossy.

Will not last long, very yummy!

You would never know there's avocados in here! I used more coconut oil then the recipe called for just to help with the blending, and will probably use a little less cocoa powder next time. This is a great summer recipe, you don't even have to turn your stove on!

I added milk to aid in the blending and also some cinnamon to taste. Also easier to make in the food processor than the blender.

Very rich and tasty--almost like mousse. As I melted the coconut oil, I warmed the honey. I blended this mixture with the already-blended avocado and it made it silky smooth. I also adjusted the flavor adding a little ore vanilla and a sprinkling of stevia. Finally, I served it with sliced strawberries. My husband still loves his ice cream, so he used this recipe like a fudge topping. You really can't tell it uses avocados!

Yum!!! This is sinfully rich and so divine. I added a few tablespoons of coconut milk to thin it some. Next time, I will serve it with a banana.
