Orange Coconut Carob Fudge

(No Bake – Gluten Free)

  • 3 cups walnuts
  • 2½ cups shredded coconut
  • ½ cup carob powder
  • ¼ cup honey
  • ¼ cup pitted dates
  • 3 tablespoons coconut oil
  • ½ teaspoon vanilla beans (scrape and set the seeds aside)
  • ½ teaspoon finely grated orange zest

Process nuts and coconut in a food processor and set aside in a mixing bowl.

Stir the remaining ingredients together and mix until well blended.

Add this mixture to the coconut mixture and stir very well. Press into a glass container and chill in the fridge until firm to cut.

Hi Jane, I tried the recipe today and found I needed to increase the coconut oil by 4 more tablespoons or the ingredients wouldn't stick together. The dates were a little dry and the weather is cold here in Montana, so that might account for some of it. The fudge is very tastly though! I made it to take on a trip & I'm sure I'll enjoy having the treat along.
