Coconut Fruit Smoothie

Servings: 1
Preparation Time: 10 minutes

  • 1 cup coconut milk or regular whole milk
  • 1/2-1 whole banana
  • 1/4 cup frozen fruit: berries, peaches, etc.
  • 2 tablespoons fresh ground flax seeds
  • 2 tablespoons fresh ground nuts: almonds, pecans, etc
  • 1 tablespoon dry coconut (flakes, etc.)
  • 1 tablespoon coconut oil, melted

Place all ingredients except coconut oil in blender and blend. Slowly pour coconut oil into blender while blending. Blend until smooth and serve.

looks delicious, I think I'll try it. :) I love smoothies, and the berries just make it all the better. I might even substitute the milk for yogurt. :)

I love using the coconut oil in smoothies. It gives it such a good flavor. I have not tried melting the oil before adding it to the mixture. Does this help it to mix more thoroughly?

Hi,
Just wanted to say I saw this recipe on Facebook and it looked so delicious it inspired me to get up and make a smoothy. I didn't have any berries, so I used mango plus mango orange juice instead. I used coconut milk and added some protein powder instead of nuts. It's delicious. Thanks for the inspiration.

Susan: Melting the oil and adding it in a small stream to the smoothie while it is still blending helps it to mix thoroughly without forming clumps.

I make this smoothie every morning...except I use kefir, or half kefir and half coconut milk. I do not put nuts or coconut in, although sometimes I add coconut cream (mainly in the summer when it is soft and spoonable). Also wonderful is kefir, coconut milk, fresh pineappke, an orange (or a big dollop of frozen orange juice) and some stevia!

Sometimes I make a smoothie in the morning to have for breakfast and this looks scrumptious! I will probably leave out the nuts and flax seed, and dried coconut but I'm sure it will be delicious! Thanks for the recipe, Jean!

I made this with 6 pieces foz mango, 1 small froz banana, 6 whole almonds (I have a vita mix), 1 cup whole milk, and 1 tlbs melted coconut oil. It's delicious! I didn't have the other ingredients suggested, but this came out great. Thanks!
