Servings: 6
Preparation Time: 12 minutes

Season chicken with salt, lemon pepper and Italian seasoning. Toss to mix evenly. You can now either proceed with the recipe or refrigerate the chicken for a few hours until needed.

Preheat oven to 375 degrees F.

Dip each chicken piece individually into the beaten eggs and roll in bread crumbs to coat. Place in a large glass pan. Repeat with each piece. Dot the chicken pieces with the coconut oil and butter.

Bake in preheated oven for 30-45 minutes or just until chicken is cooked and no longer pink (you can leave it just a little undercooked for the next step).

Top with shredded cheese and return to oven. Turn temperature up to 450 degrees F (don't wait for it to preheat) and bake for 5-10 minutes. Cheese should be browned and bubbly.

Sounds like a great recipe! For those who are diabetic, you can substitute crushed pork rinds for the breadcrumbs.

This recipe sounds delicious, gourmet, healthy.....,may be a recipe that would be perfect for special guest during special occasions, holidays (e.g., XMAS, Thanksgiving, Potlucks, Superbowl, etc. I've always loved the taste of the combination of Italian Seasonings.

WOW--SOOO Yummy. I used way more seasonings. Since I didn't have Italian, I looked up the contents and add each spice seperatley. Since I didn't have lemon pepper, I added the juice of 1/2 lemon to the beaten eggs and used the zest of one lemon as weill in the eggs. For fun, I tried Feta cheese on two of the chicken breasts. I LOVED IT!

Thank you for this recipe. I made it the other night and we loved it. Since we are on a Gluten Free program I used Almond Flour in place of the bread crumbs and worked great.
