Quick Chocolate Coconut Pudding-Fudge

If you're on a sweet or chocolate craving looking for something quick and easy to make, then come over here. I have something for you.

It's called Quick Chocolate Coconut Pudding/Fudge, and there's no cooking whatsoever. And it can be made in under 5 minutes.

Seriously!

Just watch the video. It'll walk you through the whole recipe. This recipe is so quick and easy; it can be made whenever you so desire (providing you have Coconut Cream Concentrate, of course. You cannot substitute for it).

And as the name says, it can be either a pudding or fudge.

Look at how creamy that is. But it's dairy free! Sshhh, don't tell. No one will ever know. On top of being naturally dairy free, this is gluten free also.

If you're not a pudding person, pour the pudding into a small parchment paper lined pan and refrigerate or freeze until firm. Then you get this:

No, I didn't put nuts in there (I'm not too crazy about nuts in my sweets). Those are little coconut oil clumps. You can mix and mix and mix and mix (depending on how solid the oil is) to fully blend them all in but I don't bother. It tastes phenomenal just the way it is: creamy, rich, soft, and sweet. Not a sickeningly sweet like a lot of fudge; it's just right. And unless you use more Coconut Cream Concentrate and Virgin Coconut Oil (instead of Expeller Pressed coconut oil), the coconut isn't noticeable. Even coconut haters will eat this if you don't tell them there's coconut in it.

That's it! It's just a 3 step process. Measure, mix, and eat. Unless you're making fudge, then there's one extra step. But I doubt that it'll make it to the fridge. *grins*

Enjoy!

Sarah:)

Quick Chocolate Coconut Pudding/Fudge

Mix all ingredients well, except the nuts. Add nuts, if desired, and mix through.

This makes 2 small servings (it is very rich).

When eaten at room temperature, this is something like a rich pudding.

To make fudge: Double or triple recipe, pat into a pan and chill until firm; cut into squares. Depending on the temperature of the room, let it stay at room temperature a while before serving.

Wow!!! Thank you thank you for posting this recipe!!! It is absolutely amazing!!! I have tried it as pudding and now I've tried it as fudge with the walnuts and it is so good that in the week since I printed out the recipe I've made it at least 5 times. And I've shared it with others every time I've made. I can't believe how good it is!

I gave some to a friend just tonight and she said the fudge with the walnuts tasted just like a crispy chocolate bar and it's so true!

Also, it is extremely filling. Usually with chocolate things I eat way too much before i even realize it. I can't do that with this. When I made the first batch it was so small I wondered if there would be enough for me and my kids to try it, but boy was I surprised! I'm so glad I shared it with the three of them because I would not have been able to eat the whole thing by myself even though by looking at it you'd think it was a serving for one.

If anyone has not tried this recipe and you have coconut cream concentrate in your possession, RUN, don't walk to your kitchen immediately and make this.

You're right Christy, this stuff is awesome! I a half batch with a dash of vanilla extract and it was so good! It's so rich and creamy that it's hard to believe that there's no dairy. I'm not crazy about coconut cream concentrate (not that I don't like it) but this was great. For those who'd like a more cococnutty taste try adding another tablespoon or so of the ccc.

Overall, this is a great way to get your quick "chocolate fix" and get your coconut oil in at the same time. (I'd say add more oil tho.) I preferred it as a pudding, but either way is great.

Do you substitute the same amount of Agave in place of the honey or would I use less? Thanks
# Posted By CHRISTIE | 3/2/10 5:19 PM
I would say add a little and taste; that way you will find the amount that suits your taste.

Glad everyone seems to enjoy this!

You'd be MUCH better off using honey instead of agave. Agave is NOT what it was cracked up to be, to put it mildly :/

Blessings!

I just tried this tonight. I was surprised how much like fudge it tasted! The texture wasn't what I was expecting, either (something pretty gritty/dry like plain coconut cream concentrate is). Very nice, smooth (definitely needs the extra oil) and delicious. And it was super easy. The hardest part is warming up the coconut cream concentrate enough to mix it in. I added some vanilla extract as well.

I love it when healthy meets delicious!

So easy and so good and so good for you. Hard to believe. My fav dessert! Adding pecans/walnuts and shredded coconut (or flakes) in large quantity (your call, I put enough so that its really coated nuts and coconut) makes good 'hedgehogs' or 'haystacks' after you spoon them and refrigerate. You can also roll them in coconut flakes for a neat looking finish and ease of handling with warm fingers (although a pain when making a lot :). Adding hot water to the recipe makes it easier to mix up for those of us in colder climates :)

I wonder if this would work with stevia. Has anyone tried that?

Oh my gosh this looks so yummy! I have to try this and I will let you know how it turns out. :)

Love the recipe, but I made a larger amount (3 x's) and there was way too much water to reach the consistency of fudge. It's still great as a pudding at that amount!

This was amazing!! I couldn't believe how easy it was to make the pudding and will try the fudge next time. I'm even thinking of mixing it with whipped cream for a pie...

And 3-4 drops of peppermint essential oil added to a triple batch..peppermint fudge! Awesome!

I made this as a pudding tonight, and yea, it was pretty rich just like the recipe notes indicated. My boyfriend ate his half as is, but I added about 1/4 cup coconut milk to mine (maybe a little less) and it made a really wonderful, milk-chocolate-y pudding. It was amazing! I bookmarked this recipe and will definitely make this again.

I made a similar recipe and replace the sweetening with liquid stevia drops. Always start with less and add more slowly and taste until desired sweetness. If you use too much it becomes bitter and wierd tasting. Add a dash of sea salt it helps to balance out the stevia.

I also made this but added a banana along with the vanilla extract and a dash of cinnamon. Delicious as a pudding. I did put some in the fridge but we haven't looked at it since it was put in there. Excellent recipe.Thanks.

The pudding stayed creamy with great pudding texture even though it was refrigerted overnight. The banana kept it from hardening. Delicious.
