No-Bake Blonde Coconut Macaroons

Preparation Time: 15 minutes

Mix all ingredients together well. Form into balls and refrigerate until firm.....I actually freeze them! When we make these they are gone in a few minutes because they are soooo good!

I made these with barely any maple syrup and they were awesome that way too! I'm going to work on an unsweetened version as well as some other change-ups! Thanks for sharing this inspiration!

what can you use instead of almond flour? I have limited resources.

Can you get just regular, whole almonds? Almond flour/meal can be easily made at home (that's what I always do). Just grind the almonds in a blender or food processor until it's a meal.

It works great with coconut flour! I also used raw honey instead of maple syrup. Turned out fantastic!

I made these, but they wouldn't stay in a ball shape. Had to pack it all into a glass container. Maybe I didn't use enough almond flour?
