Coconut Pudding Squares

Servings: 12
Preparation Time: 10 minutes

Pour one cup of coconut milk into a saucepan. Combine sugar and cornstarch stirring into coconut milk. (Add vanilla if desired.) Heat over low stirring consistently until thickened. Add remainder of coconut milk and whole milk and continue to heat until thickened.

Pour into 8 inch square pan and chill until firm. Cut into squares.

This looks great! Do you think you could successfully sub arrowroot powder for the cornstarch? And honey for the sugar?

Could you use honey as the sweetener? And if so, how much would you add to the recipe?

This looks very delicious. This remains me of Haupia that I love. I think you can substitute arrowroot for the cornstarch, I made Haupia with potato starch (very similar to arrowroot) and it worked well. Maybe you'll need a little more arrowroot, just look at the consistency.
