Pineapple Coconut Salad

Servings: 4
Preparation Time: 5 minutes

Place pineapple in a bowl (drain off extra juice) and add shredded coconut. Mix the sour cream (or yogurt), honey, vanilla, and arrowroot together and pour over the pineapple.

Marinate in refrigerator to moisten the coconut and allow the flavors to blend. Sprinkle with chopped pecans just before serving if desired.

Oh my gosh even my hard to please husband loves this! Who knew??? I love the flavors and the pecans add just the right crunch. Sweet, tiny bit sour, just the right mix, I love this recipe!

The arrowroot is optional -- it is often used as a thickener in cooking. Interestingly, arrowroot is also a very healthy food. Celiacs will often use it in gluten free cooking as a flour substitute.

Yes Amber. I think any kind of yogurt should be fine as long as it isn't too runny.

Hi: I make variations on this all the time. I prefer to use yogurt-plain unsweetened. Try adding sweet seeds to ad interest and change it up. I often use Anise, fennel, coriander, caraway, or other aromatic seeds to boost the flavor. Also just, sunflower seeds, pumpkin seeds, etc to give crunch. This is a great starter recipe for a wide variety of whatever you have in the pantry. Enjoy!
