Coconut Baked Oatmeal

Coconut Baked Oatmeal

Servings: 8-12
Preparation Time: 7-10 min

Preheat oven to 350 F. Grease a 9x13 baking dish.

Melt coconut oil and butter over low heat. In a bowl mix oats, milk, honey, eggs, vanilla, melted coconut oil and butter. Mix in salt, cinnamon and baking powder last. Mix well, pour into baking dish and bake for 30 min. Enjoy!

Oats are not gluten free. There are "gluten free" oats out there though.

Oats ARE gluten free but can be processed in plants that also process gluten containing products. That is why you can look for "gluten free" oats.

Oats are okay for some people with gluten intolerance, but not all. So just be careful; even if it's labeled gluten free.

How does this work/taste without milk? I'm dairy free for medical reasons... Does water work OK in this? Or almond milk?

I made this today and it's a big hit! We added a handful of raisins and next time we'll add walnuts, too.

You could use coconut milk and have good results...

My family and friends LOVED this baked oatmeal! I served it warm, with organic maple syrup, as a dessert. Very yummy!

This was a big hit at our house. I added walnuts. I am going to make another batch with walnuts and shredded unsweetened coconut. I substituted Almond Breeze for the milk, and that worked well. I was surprised that the recipe called for butter. Has anyone tried omitting the butter and using all c nut oil instead? Thanks... g

I've made this 3 times so far. Just used coconut oil - no butter. Doubled vanilla instead. Found I like a mixture (1/2 and 1/2) of traditional oats and quick 1 minute oats. Great to take to work in the morning.
