Servings: 24 cookies
Preparation Time: 10 minutes

Preheat oven to 350 degrees F.

Blend eggs, butter or oil, vanilla, and maple syrup. Add baking soda. Add quick oats, coconut flakes, cranberries. Add flour last. Drop dough by tablespoons onto a greased cookie sheet.

Bake at 350 for 14 minutes or until edges start to brown. Cool on wire rack. Makes 24 large cookies.

This came out more like cake batter than cookies even after adding 2/3 more flour. I did use white flour so perhaps that was the problem? Anyway - smells delicious. Not sure what I did wrong but can't wait to see how it turns out :)

I just made a batch of these and they are delicious. There can be no substitutions for the coconut flour as it is needed to absorb the liquid ingredients and to thicken the batter. So little is needed but coconut flour requires a large number of eggs to bind everything together. Everyone enjoyed these, even those not gluten free.

I used fine shredded coconut and it worked well. I cut back a little on the maple syrup as I thought the cookies might be too sweet. I used a half cup and that was fine. These did not last long at my house. Good luck and enjoy!

i agree w/ frances... while these cookies are great tasting & easy to make, they came out more like little cakes & not at all like the flat-looking cookies pictured. other than using egg substitute & only using 1/2c of maple syrup, i used all the listed ingredients. these cake-like cookies are very moist.
