Apple Psyllium Cookies

Servings: 48 cookies

Set oven to 375 degrees F.

1. Mix first 7 ingredients.

2. Warm coconut oil to liquid. Add maple syrup and pour over dry ingredients.

3. Add shredded apples and raisins.

4. Whisk eggs with milk and add to mixture.

Note: The dough will be very soft at first until the psyllium husks start absorbing the liquid.

5. Drop by spoonfuls onto cookie sheets lined with parchment paper.

6. Bake for 15 minutes.

This dough may also be used as mini muffins.

wow....big fiber! I have to try these. Not sure how to "shred" apples but maybe use the grater?

This recipe looks great. Is there any way to use coconut flour, or something other than wheat flour to make this recipe completely gluten free?

Sherry: I always use the large holes on a regular cheese grater.

Joanne: The recipe isn't gluten free, but feel free to experiment.

Double the cinnamon and nutmeg if you want to taste the spices otherwise they are all about the fibre and very little flavor. The coconut oil makes them great energy boosters too.

For a gluten free version I used buckwheat flour - delicious! :-)

I've even tried increasing the ground almonds and psyllium husks and it worked great. We use these cookies almost daily for our fiber needs.

Our grandchildren have helped me make these and, of course, that makes them special for them. They have them with lots of milk.
