Homemade Peanut Butter Cups

Preparation Time: 5 minutes

Line a cupcake pan with cupcake liners

Mix peanut butter, honey, oat flour and coconut flour until it forms a dough-like consistency. Add more peanut butter or flour to get the right consistency. Roll into balls and then flatten them out to put in the middle of your chocolate later.

Melt chocolate with coconut oil.

Once chocolate is melted place enough chocolate in the bottom of the cupcake liner and then place your flattened peanut butter mixture and then top with chocolate. Continue doing this until all flattened peanut butter is gone. Makes about 25 cups.

Store these in the freezer and then when you are ready to eat pull them out and let come to room temperature or eat frozen like our family does.

Could I sub in a different kind of flour besides coconut flour. That's the only thing I don't have on hand for this recipe. Thanks!

I don't have any coconut flour on hand either, but what I would try is grinding some shredded or flaked coconut in a food processor until it is a fine, flour-like consistency.

I don't use any flour...I just put coconut oil and chocolate (I use unsweetened dark chocolate) warm til everything melts...use stevia to sweeten to taste...then put in candy mold small amt. to cover bottom...freeze for a few min. then take a small amt. of nut butter(I use two butter knives to put it on top ) and place on top of chocolate...then cover with more chocolate til mold filled or nut butter covered..freeze or refrigerate...lower carbs and GF.

I didn't have enough chocolate chips & substituted some chocolate nibs. I didn't realize they don't melt... but they turned out nice & crunchy. I think I'd like them smoother but if you like crunchy, try some nibs. THESE ARE WONDERFUL. Thanks for sharing!
