Gluten Free Banana-Blackberry Muffins

Preparation Time: 35 minutes total

Preheat your oven to 350 degrees F.

Combine everything but the coconut flour and baking powder into your mixing bowl.

Mix on low-medium speed until well blended. Next, add your coconut flour and baking powder and mix again. Scrape down the bowl and mix one last time until combined and relatively smooth.

Pour into greased muffin tins (or silicone) and bake for approximately 20-25 minutes (until firm to the touch).

Can blueberries be substituted?

I don't see why not. I think blueberries would be delicious! Just so you know, these muffins are (purposelfully) not too sweet. If you prefer your muffins sweeter, you should consider increasing the maple syrup. For our family, though, they were perfectly sweet! Hope you like them!

Could I bake this in a loaf pan as is or would I need to alter any ingredients?

I've baked these and replaced the maple syrup for unrefined honey and they're just delicious.

Do you know what the calorie content of one of these would be? I made them but now don't want to try them until I know how many calories I'm consuming! I subbed honey for the maple syrup....ugh..I hate counting calories, but sometimes that's just what you have to do! Ugh!
