Servings: 6-8
Preparation Time: 30 minutes

Cut thawed chicken into desired length strips, pat dry with paper towel.

Place coconut flour in a flat dish wide enough for dipping.

Put eggs in a another flat dish and whisk

Put the rest of the dry ingredients in a third flat dish; stir ingredients until mixed

Line up dipping bowls and dip chicken strips first in flour, then in egg, then in coating mixture

Heat 1/4 cup coconut oil in a frying pan. Fry strips on medium heat until done, about 4-5 minutes on each side, adding oil as needed.

Do you happen to know the caloric or fat % for this meal? I would like to make it for my children but want to be sure that it is not horrible for them.

I don't like the smell of frying or the mess it makes. Is there a way to "oven fry" these? Thank you for the wonderful variety of gluten free recipes--I'm going to get going on trying them!

Tara-
Coconut oil is made up of medium chain fats, which means that your body metabolizes them easily as energy, unlike long chain fats (ie: vegetable oils) which are what your bodies fat stores are cromprised of. Coconut oil has an amazing effect on metabolism, thyroid function and weight loss. I wouldnt be concerned about the calories or fat, if anything it will make your kids healthier.

Made this and substituted slivered almonds for the shredded coconut. It was very good!
