Preparation Time: 40 minutes

Soak pitted dates in hot water for 10 minutes then drain well & dry on paper towel. Blend the dates & coconut oil in a large food processor until smooth. Add cocoa, vanilla extract & honey, continue to blend until mixed well. Recipe can be made in 2 half batches for easier blending.

Put fudge mixture into 1 gallon heavy duty freezer zip lock bag. Add nuts & seal bag with most of the air out then massage by hand until the nuts are mixed well into the fudge. Press all the air out of the bag, seal & place on flat surface & press down firmly to shape the fudge. Refrigerate for 1 day.

Compress fudge again on the 2nd day to get a firmer fudge consistency. On the 3 day it can be cut into 12 pieces. Keep refrigerated until served.

For holiday meals, freeze separated fudge pieces for 1 hour then stack fudge on a chilled serving plate immediately before table presentation.

What is the trick to getting the cursor to what I want to click on? For example, Recipes... hover over it and the list is over an inch lower and there is no way i can select from that list! they disappear or change as the cursor tries to catch up! Grrr!:(
It is the same for all!Grrr! :(
Or have you trained a coconut gremlin to play tricks on me???

Please try my recipe before you honestly rate it. I know it sounds weird, but it's really not weird at all. You will be pleasantly surprised because it looks & tastes exactly like traditional sweet fudge... delicious!

It's much sweeter than you think because medjool dates are very sweet. If you follow my directions to the letter, no one will know that it's not traditional fudge as long as you dont tell them what's in it...well not at first anyway! I love to see the look of surprise on their faces! LOLl!

I pulled that little trick on my 3 grandkids, one absolutely hates raisins with a passion! After they ate a piece, I told them dates were in it & they look like big fat raisins. Their reaction at first was shock! They stared at the fudge, (exact same fudge is in the picture) then took another bite. They ate the whole batch & asked for more.

It's a great way to get kids to eat a healthy fruit. It's also a great cheat snack when your on a diet, so you don't feel so guilty about cheating! ;-P
