Preparation Time: 20-30 minutes

Melt coconut oil with the chocolate. Add the coconut cream concentrate and stir until well incorporated. Add 1/2 cup shredded coconut and (chili too if using), mix well and place in the freezer to cool and firm up.

Meanwhile combine toasted coconut and salt and pour onto a plate. Roll mixture into small balls and roll in toasted coconut.

What is coconut cream concentrate? Where do you find that ingredient? I am not familiar with it. Can you use coconut milk??

Coconut Cream Concentrate (according to the website) is also known as Coconut Butter, Coconut Manna. Essentially it is the whole coconut minus the water (meat and oil).

What you are mentioning would not substitute well as it would affect the firm texture to give you the ability to make them into ball form.

I made this for Christmas and I think it was a lovely dessert. But, I added some honey when I was mixing everything because this basically called for no sweetening at all, and I think a bit was needed. I also added a bit of sugar to the coconut coating to give it a little more sweet taste. That is just my preference, these little balls were very coconutty and delicious whether sweetening was added or not.

I added some stevia and rolled these in finely chopped salted almonds. They were like truffles, delicious.
