No Bake Chocolate-Peanut Butter-Oatmeal Cookies Recipe

Preparation Time: 10 minutes

Over low heat, melt coconut cream concentrate, peanut butter, honey, milk and vanilla and whisk together until well incorporated. Mix in cocoa powder. Last, add oats and let sit over low heat for 5 minutes, stirring frequently.

Drop by spoonful onto parchment paper lined cookie sheets and refrigerate for 2 hours. Enjoy!

Can I use coco nut oil in place of coconut cream?

No; coconut oil lacks the coconut meat solids that coconut cream has.

my daughter and i made these to use in school lunch instead of the kashi bars that she wants all the time. we added coconut and unsweetened cranberries together and had fun! i think that i'll freeze them and send them in her insulated lunch box, hopefully they'll keep that way. so far, we love them!

I absolutely love these cookies, and I'm so glad there is a healthier version. I make them with almond butter, too. Is the coconut cream replacing something else?

Could you use almond meal (or something like that) in place of the oats to make these gluten-free? I react even to "gluten-free" oats, so that's why I'm asking.
Like Robyn, I'd use almond butter in place of the peanut butter, too.

Haven't tried these cookies, but I know they're good. However, can you use something in place of cocoa powder, as am allergic to cocoa.

I use shredded coconut instead of oatmeal, great for those who react to oats. Delicious!

I just tried this today with almond meal, I didn't have any oats on hand. I can't testify to the finished product just yet, as they are now in the refrigetator setting up. I can however, tell you that they taste amazing! One other substitution I made was I used agave nectar instead of honey because I don't have any honey either. Thanks for this recipe!
