Grain Free Cinnamon Rolls Recipe

  • 1 1/4 cups tapioca flour
  • 1 cup coconut flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons xanthan gum
  • 5 teaspoons baking soda
  • 2 eggs
  • 1/2 cup coconut oil, melted
  • 1/4 cup water


You will need:

  • Wax paper
  • Extra tapioca or white rice flour for dusting
  • Rolling Pin

1. Mix the tapioca & coconut flour in a large bowl. Add the other dry ingredients and mix well.

2. In separate bowl, whip the eggs well. Add the oil and water and mix.

3. Pour the liquids into the dry ingredients and mix until makes sticky dough (add more water as needed). Set aside in fridge to allow coconut to absorb liquids and oil to thicken to make dough more pliable.

4. For the filling, mix all liquid honey and butter first, then blend in cinnamon and more sugar to your liking. Set aside.

5. Preheat oven to 350 degrees °F.

6. Spread out the wax paper of plastic wrap. Sprinkle with flour to prevent dough from sticking.

7. Place dough in the center of the workspace. Flatten slightly with hands. Sprinkle flour on top to make dough a little less sticky.

8. Apply flour to rolling pin and roll out dough to a rectangular shape.

9. Spread the filling to the top of the flattened dough. Roll the dough carefully from one side to the other, using the wax paper to help lift and the coating flour to help separate.

10. Now that you have a cinnamon roll log, cut it in half. Each half, cut in half again until you have 8 pieces.

11. Lightly dust a tall edged baking pan with flour, not oil. (I made that mistake with the first batch!) The flour helps the sugar not to burn and make bottoms crispy. Place rolls gently on baking pan and put in oven for 25-30 minutes. You can check the doneness by inserting a toothpick to see if it comes out clean.

12. Let the rolls cool for at least 5 minutes. You can apply a simple icing, mix icing with coconut flakes and pecan pieces or syrup with butter or eat them plain. (Icing is made from mixing powdered sugar and milk/water).

Hello, was very excited to make this recipe. However, I thought that 5 tsp of baking soda was a lot, but I made it anyway. The taste was very bitter. I was wondering if there was a mistake in the measurements. TIA Marilyn

I don't have any xanthan gum. Is there something else I can use in place of it??

I am, too, concerned about the baking soda. Is 5 tsp of baking soda correct?

I tried this recipe and it was very bitter. I believe the recipe should be 5 eggs and 2 teaspoons of baking soda. Will try again.

I've been using gelatin in place of xanthan gum with good results so far... equal amounts.

I am confused , all the effort , and you finish it with sugar. It seems grade B maple would be much better for you . And would add a deeper taste .

I agree, too much baking soda. Made it way too dry and bitter. My dough was also crumbly when rolling it out and I added extra water but I wonder if another egg would make it more pliable. Will definitely make again, with these adjustments!

I tried this recipe, : (. Very bitter, had to throw away. Costly to me. I cant imagine this not happening to others, not just me.

Ok I made these succesfully, it is 5 eggs and 2 tsp baking sodea, plus I added about 5 tblsp sugar to the dough, it was needed, you could even add more and another couple tbsp water to the mixture. Made icing and even my picky eaters ate two.

Great recipe. Don't use flax seed in place of xanthum gum! I made the mistake of trying to keep it a tiny bit healthier and avoiding going to the store for an expensive product. My dough tasted slightly like cardboard... :( but the inside tasted great! Will try again soon with the correct ingredients.
