Chocolate Strawberry Brownie Cookies Recipe

Preheat oven to 350 degrees F.

Melt the butter/oil in a saucepan. Once melted, add the cocoa/cacao powder and 1/4 cup of chocolate chips and remove from heat.

Once the chocolate chips have melted, add the coconut milk, sugar and vanilla and blend with hand mixer.

Combine the almond flour, salt and soda in a mixing bowl. Pour the butter mixture into the flour mixture and stir well.

Fold in the additional 1/2 cup chocolate chips and strawberries.

Bake on a parchment lined cookie sheet for 11-13 minutes.

Let cookies set up on the cookie sheet for at least 5 minutes or they will fall apart. Let cool on a cooling rack to continue to set up. Store in an airtight container.

I followed the recipe as written, but am puzzled as to why my "cookies" turned into crisps. Delicious, but maybe there is too much oil or not enough flour in this recipe? Any help would be appreciated. Thank you!

Based on the review by Julie above, I cut the oil to a 1/2 cup and increased the almond meal by 1/2 cup. They are not out of the oven yet, but the batter consistency was perfect!

Can I substitute almond flour with coconut flour?

GREAT, rich flavor, but they didn't hold together at all...yes, I waited til they were room temp...even chilled they fell apart. Next time I will cut the oil a bit and add an egg.

I added about 1/4 cup extra almond flour and 1 egg. This made them turn out great!
