For the cupcakes:

Preheat oven to 350 degrees ºF.

Combine the softened coconut cream concentrate, eggs, coconut milk, honey, and vanilla until blended. Then add in your dry ingredients. Place batter in 12 muffin cups and bake in an oven preheated to 350 for approximately 20 minutes or until baked through.

For the frosting:

Whip all ingredients together with a hand mixer or stand mixer. Turn your mixer on high and go at it for a few minutes until it is smooth and beautiful. Then place the bowl in the fridge for about 15 minutes. Take it out and whip it again with the mixer. It should be nice and creamy and fluffy. Spread onto the cooled cupcakes just before serving!

I made these and they're awesome! Just the right amount of sweetness, they turned out moist and delicious! I didn't have cardamom, but otherwise followed it exactly. I will use the frosting recipe for topping other GF items in the future.

will the frosting melt in warmer temperatures? or should it sort of hold its own a bit?

We are on GAPS diet and also incredibly limited on anything sweet due to yeast overgrowth. My daughter has her 8th birthday coming up in a few weeks and we are allowing cupcakes for her birthday. I have been trying to find something different for her, rather than the same boring flavors we already have been eating (minus the honey). This chai cupcake fit the bill. We did a trial run with cutting the recipe in half to yield 6 cupcakes. My daughter LOVED these cupcakes and wants them for her birthday.
