Base Recipe:

Coating:

Add dried coconut to food processor, and process alone for 30 seconds to 1 minute to release oils. Add in almonds, vanilla, cinnamon, salt and process until all mixed & fine. Add in dates process, and then add in honey.

Form into balls with your hands. Roll in sugar & cinnamon coating.

You can eat the as is, freeze, or dehydrate at 115 degrees ºF overnight.

Delicious! I used organic coconut sugar with the cinnamon and shredded coconut for the coating. I followed the ingredient list as stated but I processed everything in my machine a bit differently and until it became a sticky ball. Otherwise, forming balls with your hands might be hard to do. Let it all come together into a big ball in the food processor before you start making the small balls with your hands.

These are AWESOME!!! I opted to use the maple syrup instead of the honey. I didn't have fresh dates, so I soaked the dates I had in water overnight so that they'd soften a bit. This recipe is a winner! Yummy & super easy. Had my friends taste these and they all loved them. This recipe yielded 10 balls for me. Thanks so much for posting this great recipe! :)

Oh my! Made these with pecans as I am allergic to almonds. Have no idea how many they made because they get eaten as soon as one is made. Rolled in powered agave and cocoa powder. Fast and fabulous. Dessert in five minutes, what more could you ask for? Best " donut hole" I ever ate.

Delicious but I found them sweet enough that I left out the maple syrup and sugar for coating.
