Grain Free Coconut Lemon Blueberry Pound Cake Recipe

Servings: 3 mini loaves - 6 servings per loaf
Preparation Time: 15 minutes

Pre-heat oven to 350 degrees ºF. Thoroughly grease 3 mini bread pans (5 1/2 X 3 1/2 in) with coconut oil.

Mix dry ingredients and set aside. In large bowl beat eggs then add honey, lemon juice, lemon extract and melted butter. Mix thoroughly. Add dry ingredients and whisk or beat until well combined. Fold in blueberries. Pour batter into mini loaf pans.

Bake in preheated oven for 40-45 minutes. Toothpick should come out clean.

Cool pans on rack for 10 minutes then remove bread. Store in refrigerator after cooled. Freezes well.

since baking powder contains cornstarch, these might not qualify as grain free

Made this today, smelled wonderful and had good flavor but it totally fell apart, a big batch of crumbs. My kids ate it in a bowl with a spoon.

Not sure how much lemon juice to use??
1 lemon is not 1/2 cup, more like 2tb.
How much have the people that made it been using?

This is a very tasty, easy recipe. Traditional baking powder contains cornstarch, but I always use Bob's Red Mill. Better than "main stream" powder and soda. I am not sure why it would have fallen apart. Possibly over beating?

Agree re: 8 eggs, maybe could use 2-3 whole eggs, the remainder as egg whites ? They provide the "lift" yes ?? Also, IS there an organic baking powder available, not made from GMO corn ?? Otherwise, a great idea, and I want to try substituting banana's for the blueberries too.

Rumford brand baking powder is not corn/grain-free but it is non-GMO and gluten-free...

In Australia you can buy Lotus Gluten Free baking powder. No salt (sodium) , cereals or aluminium.

Hi guys
Any recipes you might have using coconut products that don't contain eggs?? Am looking for something for school lunches/afternoon tea that are wheat/egg/dairy free.

The reason the recipe calls for so many eggs is because coconut flour is much more absorbent then wheat flour, if you don't use enough eggs it will not work. Not sure, but maybe that's why some people had problems with them falling apart, maybe they didn't have the right amount of moisture in the batter. Anyway, there are things you can use in place of eggs in recipes, here's what I found on one of Bob's Red Mill product bags...

*Eggless option: Combine 2 Tb Flaxseed Meal + 6 Tb Water; let stand one minute. Add to recipe as you would the eggs.

I've never tried substituting anything for eggs, so I have no idea how well it works, but it's worth a try for anyone who has an egg allergy/sensitivity.

Also, note: The egg substitute instructions I gave was meant to substitute 2 eggs, so you'll probably have to use 4x the amount for this recipe.
