Gluten Free Triple Coconut Honey Cake Recipe

Note: I find that gluten-free cakes work well in smaller pans. I use a mini loaf pan for this recipe that measures 3 inches wide by 5 3/4 inches long.

Pre-heat oven to 325 degrees °F.

In a bowl or pan, gently warm the coconut oil, coconut cream concentrate, and raw honey until they can be stirred smooth. Add to bowl with egg and applesauce.

Next stir in flour, baking powder, and salt. Scrape all batter into oiled (I use coconut oil) mini loaf pan. Sprinkle shredded coconut evenly over the top. Bake at 325° for 35-40 or until toothpick comes out clean. Remove from pan and place on cooling rack. Let cool 15 minutes before slicing.

I am afraid the proportions are not correct. Only 3 tablespoons gluten free all purpose flour?

Kate, Yes, it works with 1 T. coconut flour and 2 T. GF flour. I also tried it with all coconut flour but it wasn't as good.
Jessie, Yes, only 3 T. flour. It is a mini-loaf pan.

Kate, yes, I experimented with coconut flour. 1 T. coconut with 2 T. other GF flour worked well. Using all coconut flour changed the texture and wasn't as delicate and moist.
Jesse, yes, 3 T. flour is correct for this mini-loaf recipe.

I understand your concern but if you re-read the recipe this only makes a "mini" loaf it's not a full size loaf cake only like a large or double muffin size cake. Hope this helps.

I just made it with 1tbs coconut flour and 2 tbs vital wheat gluten. We are not going for total GF but more low carb. It smells good baking. I didn't have the concentrate either so I used coconut flavoring. We shall see

The proportions are correct - keep in mind the coconut cream concentrate also acts as a flour, and this recipe makes 1 small mini loaf. To find the gluten free flour mixes, type in "gluten free flour" into the search bar and take a look through the recipes that have individual gluten free flour recipes.

You can replace flour with banana and then you don't even have to use honey or other sweet stuff - and it is so delicious :)

Gaye - the ingredient is hyperlinked to the product page, which has all the information. If you click on it it will take you there.

Jean - Flax egg should work. Skipping the CCC may also work but it will change the flavor so with all the changes put together it won't exactly be the same finished product.
