RecipesOatmeal Coconut Cookies
Preheat oven to 375 degrees. Cream coconut oil and sugar until well blended. Add eggs one at a time mixing well after each addition. Add vanilla, salt, and baking powder; blend well. Add flours in order given then by hand mix in oats, coconut, and raisins. Drop dough with a cookie scoop onto parchment lined baking sheet. Bake for 10 minutes in preheated oven. Enjoy!! These cookies were very good. I did cut down on the amount of sugar used to 1 cup. That amount seemed to be plenty for us. I did not have wheat flour so I increased the unbleached four to 1 and 1/4 cups. Yummy

These were dense, chewy cookies. My whole family loved them. The only change I made was to add about 1 tsp. Cinnamon. In the future, I will use a combo of brown and white sugar. Also, the cookies didn't flatten out while baking, so I had to press them flat, otherwise they became too "cake-like." Good recipe!
