RecipesPineapple Coconut Salad
Servings: 4
Place pineapple in a bowl (drain off extra juice) and add shredded coconut. Mix the sour cream (or yogurt), honey, vanilla, and arrowroot together and pour over the pineapple. Marinate in refrigerator to moisten the coconut and allow the flavors to blend. Sprinkle with chopped pecans just before serving if desired. Recipe submitted by Janet, Springtown, TX
Oh my gosh even my hard to please husband loves this! Who knew??? I love the flavors and the pecans add just the right crunch. Sweet, tiny bit sour, just the right mix, I love this recipe!

Ooooo! Can you say yummy? Really easy and very good. Great for snacking or as a dessert. I know I will have to triple this for when the grandkids come over!

The arrowroot is optional -- it is often used as a thickener in cooking. Interestingly, arrowroot is also a very healthy food. Celiacs will often use it in gluten free cooking as a flour substitute.

Yes Amber. I think any kind of yogurt should be fine as long as it isn't too runny.
