Tropical Cocktail

Serves 2

150 ml water
1 ½ tablespoons coconut concentrate
½ cup frozen mango
1 ripe banana
120 ml orange juice
1 teaspoon lime juice
3 tablespoons vanilla yogurt
2 tablespoons coconut oil, liquefied

Mix water and coconut cream concentrate together until well blended.

Put everything except oil in a blender and process until you get a smooth texture of a drink then add oil and process again. You may add 3 drops of stevia to give sweeter taste. Especially good for a hot sunny day!

This is a delicious and wonderful smoothie! I use a little less water than it calls for as I enjoy thicker smoothies. On occasion I have added one or two strawberries. But a very good recipe.
How do you keep the coconut oil and the coconut concentrate from lumping up when it blends with the cold liquid? Thank you.

For the oil, make sure it's melted and slowly pour in while blending. For the coconut cream, it's best to put the amount needed in a little bowl and let it sit in hot water until it's soft, then blend it in while still warm.

Try that or stir both oil and cream together to make a liquid and slowly pour it in that way. Hope this helps!
